Overnight Homemade Dill Pickles Recipe 


Hi everyone. Today I have a quick and easy overnight pickle recipe that is SUGAR FREE! I searched and searched for a good overnight pickle recipe and most of them contain sugar. This is a delicious dill pickle recipe that our family adapted to our taste. This recipe doesn't have that tang that most vinegar pickles have and is also sugar free. Best part is, you can eat them the next day!




Overnight Dill Pickles

Ingredients:
12-20 small cucumbers
6-10 cloves of garlic
3 sprigs tablespoons fresh dill
1 cup vinegar (apple cider vinegar or white vinegar)
2 cups water
1/4 cup salt

Instructions:
1.  Slice cucumbers into spears or leave them whole if they are smallCut garlic cloves in half.

2. Pack a large jar with cucumbers, dill, and garlic.

3. Heat vinegar, water, and salt (we use pink Himalayan salt) until boiling.

5. Pour boiling liquid over the cucumbers, making sure they are completely submerged in the liquid. 

6. Let the jar come to room temp and then place in the refrigerator. Your pickles will be ready after 12 hours!




Please note, the garlic may turn blue/green. This is because of the sulfur compounds found in garlic that react with copper to form copper sulfate. The amount of copper needed for this reaction is very small and is often found in normal water supplies. The garlic is safe to consume and IMHO, one of the best parts!

 Isn't it amazing how adding a few ingredients to a simple vegetable can make them completely irresistible? This recipe transforms the veggie that my children would normally not eat without a little coaxing into a delectable treat. These pickles contain vitamin A & K, iron, potassium, manganese and calcium as well as dietary fiber. We think they are a pretty tasty way to get your veggies in :) Hope you enjoy!
