🧡Protein Packed Pumpkin Muffin Recipe🧡

🎃 I am so into fall baking and I of course love tasting the treats we bake! 



Unfortunately, I TRULY feel a difference in my joints. I believe it's either the gluten or the sugar but either way I am working on creating some fall recipes that use less flour and less refined sugar. 




I apologize for the dark photo, I made these at 5:30 am and they didn't last long enough for a better pic.


Yesterday I threw together these pumpkin muffins made with protein powder. Now, here's the thing with these muffins, I hope you like the taste of your protein powder because there will be a faint taste of it when they first come out of the oven. As the day wears on and even the next day, I have noticed that I no can no longer detect the protein powder in the muffins. It seems to be when they are still warm from the oven. That being said I apparently still loved them because I proceeded to eat half the batch yesterday. 😂🙈🤷‍♀️🤷‍♀️


So here it is, a clean and simple protein muffin recipe!



1 1/2 scoops of protein powder (about 4-5 Tbsp.)
1 Cup Shredded Coconut 
1/2 cup almond milk
2 eggs
1 cup canned pumpkin or pumpkin puree
1/4 cup plus 2 Tbsp. maple syrup or honey
1 tsp. vanilla
1/2 tsp. pumpkin spice ( I used finely ground mulling spices from my friend)
1/2 tsp. cinnamon
dash of salt

Mix all of the ingredients in a mixing bowl and spoon the mixture into MINI muffin liners. It's ok if you don't have a mini muffin tin, just put the liners in the regular muffin pan and they will spread our a little. I actually like that, it gives a crunchy edge which I enjoy. Now here's the tricky part, I baked my at 350 for 25 minutes but your protein powder may be different. Just check on them at the 20 minute mark and see if they are springy in the middle. 




You could also use old fashioned oats for this recipe. I like that texture of the coconut and find that coconut satiates me tremendously. Coconut also has fewer carbs so this is a good low carb option.
